Beyond The Messy Kitchen – Lemon Posset with Raspberry Surprise
I love the combination of lemon and raspberries and even more so I love a simple desserts! This post combines the two of these things! The lovely flavour combination of lemon posset with a raspberry compote combined with one hell of an easy dessert!
With a great crop of raspberries on the way I think it is a good time to share this quick recipe with you all to use them in a way that will no doubt impress your friends. I used big enough glasses for mine and got four from the below recipe but this can easily be served in shot glasses for a dinner party.
Lemon Posset with Raspberry Surprise
Ingredients
- 2 lemons
- 150g sugar
- 425ml cream
- 50g raspberries
- 1-2 tbsp water
Method:
- In a small saucepan place the raspberries, 25g of sugar and water
- Gently heat the mixture and cook for five minutes
- Remove from the heat and allow to cool before spooning into the bottom of each glass
- In a large saucepan place the cream, remaining sugar, lemon zest and juice
- Bring to the boil and boil for three minutes
- Strain the mixture through a fine sieve into a jug
- Allow to cool slightly before pouring into glasses
- Allow the mixture to cool fully before placing in the fridge to set (Approximately four hours)
- Serve with a sprig of mint
Note: I found holding a tea spoon to the side of the glass and pouring the posset on to it slowly helped prevent the raspberry bottom being disturbed
